Method

For serving: 

  • 1 loaf white bread, unsliced
  • 1 tub (125ml) low-fat plain yoghurt 
  • Diced red onion, cherry tomatoes and coriander

 

  • Heat glug of oil in saucepan, fry mince until well browned. Add onions, fry for a few minutes. 
  • Toss in spices, fry for a minute. 
  • Add marinade and water and season well. Cover and simmer for 25-30 minutes or until sauce has thickened. 
  • Add lentils and cook to  heat through. 
  • Cut bread into 4, hollow out some of the soft centre to create a generous hollow. 
  • Spoon curry into hollows, top with yoghurt and diced veg. 
  • Serve immediately with soft bread centres for dipping
