Make noodle salad a day in advance and simply toss through the herbs and meat an hour before serving.

Method
  • Rub ostrich fillet with oil and season
  • Place sesame seeds on a plate and roll fillet in seeds to coat
  • Heat a little oil in a pan until smoking hot. Sear fillet for 2 minutes on each side. Set aside to rest.
  • Toss remaining salad ingredients. Mix dressing ingredients together and pour over salad. Toss well to coat.
  • Slice fillet into strips, stir half into salad and spoon into glasses
  • Garnish with remaining fillet
