This Mexican kitchen staple is given a new twist with low-fat ostrich mince and a healthy salsa. The kidney beans are a great source of fibre and the avocado provides healthy monounsaturated fat.

Method
  • Heat olive oil in large pan. Sauté onions until soft. Add garlic, fry for another minute.
  • Add chilli, coriander and cumin and stir well
  • Toss in meat and brown
  • Stir in red pepper, chopped tomatoes, tomato sauce, tomato puree, water and chocolate and mix well
  • Simmer for 45 minutes. Add more water if necessary
  • Add kidney beans and season. Cook for a further 15 minutes.
  • Toss salsa ingredients together and season
  • Serve chilli con carne with salsa, avocado, lime wedges, rice, sour cream and nachos
