Method
  • Thoroughly mix all the meatball ingredients together. Pat into ovalshaped balls and set aside.


Tomato sauce

  • Preheat oven to 180ºC
  • Cut an ‘X’ into the base of each tomato
  • Plunge into a bowl of boiling water until tomatoes’ skins begin to loosen. Refresh in cold water, peel and chop.
  • Heat oil and sauté onion and garlic for about 3 minutes
  • Add ¼ cup (60ml) water
  • Add chopped tomatoes, tomato purée, sugar and pepper and bring to the boil
  • Reduce heat, cover and simmer for 20 - 30 minutes


Meatballs

  • Arrange meatballs in an ovenproof dish
  • Cover with sauce and bake for 30 minutes
  • Scatter with fresh oreganum just before serving
