Method
  • Place the oxtail in a large bowl with the flour and season well with salt, pepper, paprika and herb mix.
  • Toss to coat with the flour.
  • Heat the olive oil in the potjie and add the oxtail, in batches, turning to brown all over and set aside.
  • Add the onion and garlic to the pot and stir-fry for a few minutes.
  • Return the oxtail to the pot, along with the carrots and butternut.
  • Pour in the red wine and beef stock, cover and leave to simmer for at least 2 hours, or until the meat is tender.
  • Add the butter beans and cook for a further 15 minutes.
  • Stir in the herbs and check the seasoning.
  • Serve with basmati rice.
