Pan-fried haloumi with red pepper jam

Haloumi is a mild, salty, 'elastic' cheese that holds its shape when cooked. Best pan fried and served immediately, it can also be grilled, baked or used in fritters.

Method
  • Preheat oven to 220C
  • Place the first six ingredients in a saucepan and heat, stirring, until all the sugar has dissolved
  • Bring to the boil and cook for 20 minutes or until mixture reaches a jammy consistency
  • Toss pitas onto a baking tray and bake until crispy
  • Season cheese and dust with flour. Heat oil in a non-stick pan and fry cheese until golden.
  • Serve immediately on crispy pita triangles drizzled with jam

 

Cook's tips

  • Jam can be placed in sterilised jars and kept in the fridge for up to three months.
  • Serve a Greek-style salad topped with pan-fried haloumi and a sprinkling of oregano.
