Method
  • Preheat oven to 180°C.
  • Toss peppers with 2 Tbsp (30ml) olive oil on a baking tray. Roast for 30 minutes.
  • Toss bread with 2 Tbsp (30ml) olive oil on another tray and roast for 5 minutes. Set aside to cool.
  • Remove peppers from oven and cover with tinfoil.
  • Sweat for 10 minutes.
  • Peel peppers, discarding skins and membranes, and cut into strips.
  • Place tomatoes in a bowl with salt and gently squeeze out all juice.
  • Reserve juice for dressing and cut tomatoes for salad.
  • Mix juice with garlic, half the parsley and remaining olive oil to make a dressing.
  • Combine peppers, bread, tomato, beans, onion and celery in a serving dish.
  • Top with basil and parsley, and serve with dressing.
