These moreish mushroom canapés are great little party starters and prove that life isn't too short to stuff a mushroom!

Method
  • Preheat oven to 200ºC.
  • Twist mushroom stalks off to create a small hollow in cap.
  • Place on a baking tray.
  • Mix spinach with pesto and pine nuts. Spoon a small amount of filling into hollow of each cap. Drizzle with a little oil and season. Scatter with feta. Bake for 10 - 15 minutes or until cooked through.
  • Scatter over any remaining pine nuts and serve.
