Pea and ham risotto

It takes a dash of vigilance when cooking but the result is worth it and there's very little washing up!

Method
  • Heat oil and 1 Tbsp butter in a large saucepan. Sauté onion and garlic until golden.
  • Add rice and cook for another 2-3 minutes or until rice becomes slightly translucent
  • Add wine, stirring continuously until liquid has been absorbed
  • Reduce heat and gradually add stock one ladle at a time, cooking and stirring to ensure all stock is absorbed before adding more
  • Continue until for about 15-20 minutes, or all stock has been added and rice is cooked through
  • Remove from heat and stir through extra butter
  • Leave to rest for about 5 minutes
  • Stir in peas, ham and thyme
  • Serve with grated parmesan
