Method
  • Prepare peach jelly according to package instructions. Pour into a 3-litre-capacity bowl. Refrigerate for 30 minutes until just set.
  • Add peach halves and chill until set.
  • Slice vanilla Swiss roll into 1cm slices and cut each slice in half.
  • Dip in sherry or vanilla simple syrup and arrange along the edge of the bowl, on top of the jelly layer.
  • Add vanilla custard.
  • Dollop chantilly cream on top.
  • Decorate with pecan nuts, white chocolate truffle balls and a few meringues.
