Method
  • Roast cauliflower florets until caramelised. 
  • Cook ½ bag (250g) pearled barley and drain well. 
  • Fry 1 onion with some ground coriander and cumin and a pinch of cinnamon until soft. 
  • Toss everything together with the juice of 1 lemon and a handful of fresh coriander.
  • Season well and scatter over a few pomegranate rubies.
