Method
  • Chop tripe and lungs into bite-sized pieces. Rinse well.
  • Add water to a saucepan and bring to the boil.
  • Add tripe, lungs and salt, reduce heat and simmer for 3-4 hours. Strain liquid.
  • Add onion and stock and continue to cook until onion is tender and sauce has reduced.
  • Serve with stywe pap.
