Method
  • Preheat oven to 200°C.
  • Bake potatoes for 45-60 minutes or until crisp and cooked through.
  • Heat a pan and sear fillet until well browned on all sides.
  • Rub meat with Dijon mustard and roll in milled pepper until well coated.
  • Place on a baking tray and cook for 35-40 minutes or until done to your liking. Allow to rest for 10 minutes before slicing.
  • Cut open potatoes, top with yoghurt and a scattering of chives and serve with sliced meat, tomatoes and watercress.

 

Good idea

  • Slice potatoes into wedges before baking, and serve with a chive yoghurt dipping sauce.
