Method
  • Preheat oven to 180°C.
  • Brush a sheet of phyllo with melted butter and sandwich together with another sheet of pastry.
  • Cut 12cm circles from pastry and crimp up edges.
  • Place rounds on a greased baking tray. Bake until golden brown, then allow to cool.
  • Gently fold custard and cream together to create a marbled effect.
  • Pour syrup ingredients into a small saucepan over a medium heat. Stir until sugar has dissolved. Boil for 3-4 minutes or until slightly thickened and set aside to cool.
  • Dollop 2 Tbsp (30ml) custard mixture into each pastry shell.
  • Toss fruit through cooled syrup and arrange on top of each tartlet.
  • Lightly dust with icing sugar and serve immediately.

Good idea:

  • Use vanilla or PnP chocolate custard.
  • Substitute plums with berries.
  • Use shortcrust pastry instead of phyllo pastry.
