Use raspberries if you can't find pomegranates.

Method
  • Mix gelatine powder and water and stand for 3 minutes
  • Heat cream, sugar and vanilla bean and seeds in a saucepan
  • Add gelatine mixture and cook, stirring, to dissolve gelatine
  • Remove vanilla bean pod and allow to cool


Jelly

  • Soak gelatine powder in water. Heat pomegranate juice in a pan, add gelatine and cook, stirring, for 1 minute.
  • Divide jelly among moulds, sprinkle pomegranate seeds over each and allow to set in fridge for about 20 minutes
  • Pour over cream mixture and chill until set, about 2 hours
  • Serve drizzled with a little pomegranate juice and a few seeds


More good ideas

  • Add 2 Tbsp (30ml) desiccated coconut to cream mixture
  • Use passion fruit juice and pulp in place of pomegranate juice and seeds
