It takes a little time to prepare but it's well worth the effort.

Method
  • Preheat oven to 180°C
  • Heat butter, sugar and water in a pan and cook until golden
  • Pour into base of a 25cm loaf tin. Line loaf tin with sage (or bay) leaves, then with apples.


Meat mixture

  • Mix meat mixture ingredients together. Season well and carefully press into loaf tin.
  • Cover with foil and place in a deep roasting pan
  • Fill roasting pan halfway up to the top with water
  • Bake for 45 minutes or until firm
  • Weigh terrine down with a heavy chopping board and allow to cool completely before serving
  • Serve with pickled onions, gherkins or chutney if you like

  • Serve the terrine with toast and a selection of pickles, fresh herbs and sliced onion
