Pork belly with butter beans

Warm and comforting. Use canned butter beans to save time. The beans add lots of wonderful fibre and count as a vegetable serving!

Method
  • Cover butter beans with lots of water and add bay leaves.
  • Simmer for 40 minutes, or until tender. Skim off any scum that rises to the top. Drain and reserve cooking liquid.
  • Heat a glug of oil in a pan and fry onion until soft, add garlic and spices and fry for another minute.
  • Add beans, pork, wine, purée and sugar. Season; add enough reserved liquid to cover.
  • Simmer for 1½ - 2 hours, adding more liquid as needed.
  • Adjust seasoning and stir through parsley.
  • Serve with crusty bread.
