Pork chops with red cabbage

Replace the wine with chicken stock if you prefer. Spare-rib chops make great stir-fries and stews, simply cut into strips or dice.

Method
  • Heat olive oil and butter in a large frying pan 
  • Fry onion until soft 
  • Add cabbage and spices and cook until wilted 
  • Add wine, vinegar and sugar and mix well 
  • Cover and cook over a low heat for 20 minutes or until nearly all liquid has been absorbed. Season.  
  • Add apple and cook for a further 10 minutes
  • Stir through sultanas
  • Heat a glug of oil in a pan and fry sage leaves until crispy
  • Set aside to drain on kitchen paper
  • Season chops and fry until golden and cooked through
  • Top with sage and serve with cabbage and mash
