A slow-cooked Thai curry, ideal for inexpensive cuts of meat.

Method
  • Preheat oven to 180°C
  • Toss pork in well-seasoned flour and brown in oil
  • Remove and set aside. Drain excess oil from pan and fry onion until soft.
  • Add paste, lemongrass  and spices and fry for  another minute. Add lime juice, fish sauce, coconut milk, stock and meat. 
  • Cover and bake for an hour
  • Toss in butternut and baby onions. Bake for another 45 minutes or until meat is tender.
  • Top with sliced cucumber and coriander and serve with steamed white rice
