Method
  • Mix the garlic, spice, salt, bay leaves together. Add the marjoram and paprika and mix well.
  • Rub the mixture onto both sides of the pork neck steaks and refrigerate for an hour (marinading it for longer will intensify the flavours, but if you want to do this, do not add the salt yet, as the salt will draw out the meat juices and render the meat dry once grilled. Add the salt no longer than an hour before grilling).
  • Grill meat on a medium-high heat until cooked through, turning every 30-45 seconds. By turning the meat this often the meat will never be dry. Remember, pork should always be cooked through as it does contain enzymes that can be dangerous when eaten raw.
  • Serve with the broccoli salad. 
     

Broccoli salad

  • Wash the broccoli and put it in a ziplock bag for 2-3 hours.
  • Grate the onion and add sugar. Let this stand for at least 30 minutes.
  • Add mayonnaise to the onion and sugar mixture.
  • Fry the bacon until done and set aside to cool.
  • Break broccoli into edible flowers, try to keep the stems as this is the healthiest part!
  • Cut the feta into cubes.
  • Mix all ingredients together and refrigerate until needed.
