Method
  • Preheat oven to 180ºC.
  • Heat a glug of oil in an ovenproof pan and brown sausages. Remove and  set aside. 
  • Add onion, garlic, celery and carrot to pan and fry until soft. Add wine, tomato paste, lentils and stock. 
  • Bring to the boil.
  • Return sausages to the pan, season and cover.
  • Bake for 25-30 minutes or until lentils are tender and sausages are cooked through.
  • Serve scattered with parsley.


Great idea

  • Reduce cooking time by 15 minutes and use canned lentils instead  of dried, and ½ cup stock.
