Pork shoulder is one of the few roasting meats that are still affordable. Perfect for a traditional Sunday lunch.

Method
  • Preheat oven to 220°C
  • Place fennel, bay leaves, garlic, salt and pepper and a glug of oil in a pestle and mortar and grind to a paste
  • Dry the pork skin well, score with a sharp knife and rub liberally with salt
  • Rub pork meat (not skin) with paste and place in roasting dish
  • Roast for 60 minutes, then add seasoned pumpkin to the roasting pan
  • Reduce temperature to 180°C and roast for a further 30 minutes or until pork is cooked through
  • Allow to rest before carving and serving
