Gremolata made with parsley, lemon peel and garlic is traditionally served with osso buco, but lends zest to this soup.

Method
  • Fry onion and potato in oil and butter for 5 minutes. Add garlic and fry for another minute.
  • Add stock, cream and horseradish and simmer until potatoes soften and begin to break up
  • Add cornflour and salmon and cook for another minute. Season.
  • Mix together gremolata ingredients
  • Serve soup topped with gremolata


Good idea

  • Replace salmon with other smoked fish like snoek or mackerel
