Perfect for a light and healthy lunch or a Sunday supper. Salmon has a high omega 3 fatty acid content and the avocado provides beneficial monounsaturated fats. Use a low oil mayonnaise to lower the fat content.

Method
  • Preheat oven to 200°C
  • Place potato wedges on a baking tray and toss with a little olive oil
  • Season and bake for 30-40 minutes or until golden and crisp
  • Toss salad ingredients and arrange on a platter
  • Top with wedges and season to taste
  • Mix dressing ingredients together and drizzle over salad


Another idea

  • Use tuna or pilchards in place of canned salmon
