Method
  • Heat oil in a large saucepan and saute leeks and garlic until soft, but not coloured.
  • Add milk, bay leaves, thyme and fish for 8-10 minutes, or until fish is cooked through.
  • Remove skin from fish and flake. Keep warm.
  • Add stock, cauliflower and potatoes to simmering milk and cook until tender.
  • Blitz until smooth and season.
  • Serve scattered with flaked fish and parsley.
