Cheaper and more delicious than shop-bought gnocchi.

Method
  • Boil potatoes in salted water until tender
  • Drain and mash coarsely. Using a large spoon, rub mashed potato through a sieve
  • Mix sieved potato with egg and season well
  • Add flour and mix to form a dough (do not over-mix)
  • Roll dough into 4 x long 2cm-thick sausages
  • Cut each roll into 3cm lengths and gently press with a fork to create ridges. Set aside.
  • Bring a large pot of salted water to the boil, toss in gnocchi and cook for 7-8 minutes or until they float to the top
  • Melt butter in a pan, toss in the garlic and herbs and fry until crispy. Spoon over gnocchi and serve.


Another idea

  • Try using the flesh of 400g sweet potatoes roasted in their skins, in place of regular potato
