Method
  • Heat a glug of oil in a pan and fry onion until soft. Add garlic, herbs and spices and fry for another minute. Allow to cool.
  • Mix onion mixture with all remaining ingredients until well combined. Season well.
  • Allow mixture to rest for at least 1 hour for flavours to develop
  • Preheat oven to 180ºC
  • Pack mixture into a terrine dish and press down firmly
  • Place dish in a deep roasting tray half-filled with boiling water
  • Cook terrine for 1 hour and 45 minutes. Remove and cover with foil. Weight terrine down by placing a wooden board and a few food cans on top.
  • Allow to cool completely, then refrigerate overnight before serving
