Method
  • Preheat oven to 180°C
  • Combine dry ingredients in a large bowl
  • Add butter and eggs
  • Mix into a smooth batter
  • Pour batter into a greased tin and bake for 45 minutes, or until a skewer comes out clean
  • Drizzle icing or glaze of your choice over cake and serve scattered with candied peel and fruit if you like


Icing:

 

  • Pour sugar and water into a saucepan and cook over a low heat until granules have dissolved.
  • Boil sugar mixture until thickened.
  • Whisk egg whites until stiff, then, while beating continuously, pour hot syrup in a thin stream into egg whites.
  • Beat until thick and glossy.
