Method
  • Remove prawns’ heads and peel and devein tails.
  • Place filling ingredients and prawns in a blender and pulse until roughly chopped.
  • Using wet hands, shape mixture into cakes and place on a plate.
  • Carefully dust cakes in flour, dip in egg and coat in breadcrumbs.
  • Refrigerate to set (about 30 minutes).
  • Whisk dipping sauce ingredients together and pour into dipping bowls.
  • Heat 2cm oil in a pan and shallow-fry cakes until golden all over. 
  • Drain on kitchen paper and serve with dipping sauce.
