Prawn and luffa curry

Usually we'd prepare luffa with dried shrimp, but I've used regular prawns in this recipe.

Method
  • Peel luffas by removing green skin with a vegetable peeler.
  • Cut into 2cm cubes, sprinkle with salt and leave in a colander to drain for 20 minutes, shaking from time to time.
  • Heat ghee or butter and oil in a pan. Add onion and fry until it begins to brown.
  • Add coriander, fenugreek, cumin and chillies and fry over a low heat for 2 minutes.
  • Add masala and turmeric and cook for 20 seconds, stirring.
  • Add drained luffa and stir-fry fo 5 minutes over a medium heat.
  • Add tomato and fry for 5 minutes.
  • Stir through prawns and cook on low heat until prawns turn pink, about 3-4 minutes.
  • Add vinegar and adjust seasoning to taste.
  • Serve with basmati rice or freshly baked white bread.
