Method
  • Prepare a direct fire to a moderate heat.
  • Place ribs on the grill and cook for 4 – 5 minutes on each side until warmed through and golden brown.
  • Remove meat from the bone and place in a bowl.
  • To make the salsa, place the pineapple on the braai and grill for 5 minutes or until well coloured. Chop the pineapple in small chunks and place in a bowl. Add red onion, coriander and chilli. Season with salt and lemon juice
  • Prepare wraps by spreading a thin layer of low fat cream cheese on the wraps. Place pulled pork meat in the centre of the wrap. Spoon over salsa and fold the wrap neatly.

Dietitians Notes:

Swap cream cheese for cottage cheese to lower the fat content of this meal.
