Method
  • Cook pasta according to packet instructions until tender, drain and set aside.
  • Heat oil in a non-stick pan and sauté onion, chilli and oreganum
  • until soft.
  • Add garlic, tomato paste and seasoning and fry for a minute.
  • Add tomatoes, balsamic vinegar, sugar and stock, and simmer for 10-15 minutes over a low heat or until sauce thickens.
  • Stir through olives and parsley, toss through pasta and serve scattered with grated parmesan.
