Quinoa is a quick-cooking wholegrain that's high in protein and gluten free. Use wholewheat couscous instead.

Method
  • Cook quinoa according to packet instructions and drain.
  • Toss quinoa, lentils, tomatoes, spring onions and salmon together in a serving bowl.
  • Combine gremolata ingredients and season well.
  • Stir gremolata through quinoa mixture until well combined.
  • Serve with fresh lemon wedges.

 

Good idea

  • Use canned salmon or tuna instead of smoked salmon.
