Method
  • Preheat oven to 180°C.
  • Heat oil in a medium saucepan.
  • Fry onion and garlic until soft.
  • Add green peppers, tomatoes, baby marrows and tomato paste and simmer for 3 minutes.
  • Stir through thyme and basil, and season with salt and pepper and a little sugar if necessary.
  • Layer tomato mixture and aubergine slices inside each red pepper until filled.
  • Bake for 30-35 minutes or until peppers are softened and cooked through.
  • Serve warm with fresh basil leaves.
