Method
  • Heat a glug of olive oil in a saucepan and fry onion, cinnamon, cardamom and mustard seeds until onion softens.
  • Add garlic and remaining spices and fry for a further minute
  • Add remaining ingredients and cook for 15-20 minutes, until lentils become mushy and baby marrows are tender.
  • Scatter with coriander and serve with sambals and rotis
