Rice-stuffed calamari tubes

Rice-stuffed calamari tubes are delicious served with a Greek skordalia (mashed potato dipping sauce).

Method
  • Cook rice in salted water for 5 minutes (it will still be quite crunchy). Drain and set aside.
  • Sauté onion and garlic in oil until soft, then add rice and remaining stuffing ingredients, except wine. Mix well.
  • Stuff calamari tubes with the mixture using a small spoon.
  • Secure the ends by skewering with a toothpick.
  • Heat a glug of oil in a heavy-based, deep pan and sear calamari all over.
  • Pour over wine, cover and cook over a low heat for 45-60 minutes. 
  • The calamari will release quite a lot of liquid while cooking.
  • Place garlic, lemon juice and olive oil in a food processor and blitz until smooth.
  • Add potato and pulse until smooth, but not gluey.
  • Season and serve with calamari and lemon wedges.
