The perfect snack before your dinner and ideal for cocktail parties, these creamy morsels are absolutely delicious.

Method
  • Mix ricotta, parmesan, parsley, lemon peel, garlic, nutmeg, mint and egg yolk together. Season.
  • Roll teaspoonfuls of the mixture into balls and gently mould mixture around an olive until completely covered.
  • Refrigerate for 15 minutes to firm up olive balls.
  • Dust olive balls lightly with flour. Dip into beaten egg and roll in breadcrumbs.
  • Refrigerate for another 15 minutes to set crust.
  • Heat 4cm oil in a saucepan.
  • Fry olive balls until golden.
  • Drain on kitchen paper. Serve warm or at room temperature.
