The ultimate chicken sandwich, just the thing for leftover roast chicken.

Method
  • Preheat the oven to 190°C.
  • Season chicken and roast for 20 minutes or until cooked through. Allow to rest for 5 minutes, then carefully remove chicken from bone and cut into strips.
  • Slice baguette into 4 lengths. Halve and toast.
  • Top toasts with lettuce, avocado and chicken.
  • Mix mayo ingredients together and serve on the side with sandwiches.


Cook’s tip:

  • Chicken breasts on the bone are around half the price of deboned skinless chicken breasts, and they’ve got more flavour, so simply debone them yourself.
