Roast Chicken Club Sandwich

A cold roast chicken is ideal to have in your fridge over the holidays; it makes many a delicious thing. Roast two chickens one for supper and another to keep in the fridge for up to 3 days. Cooked, shredded chicken can be frozen for up to one month.

Method

 

Chicken

  • Preheat oven to 190C
  • Rub chickens all over with olive oil, season inside and out with salt and pepper. Stuff cavities with thyme and lemon and roast, covered in foil, for 45-60 minutes. Remove foil and roast for a further 20-30 minutes.
  • Serve one chicken as desired and allow the other to cool before refrigerating.

 

Sandwiches

  • Spread four slices of toast with mayonnaise, top each slice with lettuce, sliced tomato and chicken, spread another four pieces of toast with mayonnaise, on both sides, and place on top. Top with lettuce, sliced tomato, some chicken, a slice of ham and a third slice of toast.
  • Place a toothpick through each sandwich (this helps hold everything together).
  • Cut in half and serve with chips and salad
