Roast rolled pork belly

This cheap and easy-to-cook roast is equally delicious served hot or cold. The coleslaw adds a healhy crunch!

Method
  • Heat oven to 220°C.
  • Score pork skin, all the way around the roll, into thin strips without cutting through to the meat.
  • Rub salt all over skin and into slits. Season with pepper.
  • Place pork on a rack in a roasting pan filled with water.
  • Roast for 30 minutes. Reduce oven temperature to 180°C, and roast for another hour, covering with foil after 30 minutes.
  • Allow to rest for 10 minutes, remove string and carve.
  • Drizzle slices with pan juices.

Coleslaw:

  • Mix coleslaw ingredients together, season and drizzle with olive oil and lemon juice, or your favourite dressing.
  • Garnish pork with sage and serve with coleslaw.
