Roast vegetable and pea frittata

A perfect and healthy way to use up leftover roasted vegetables.

Method
  • Preheat oven to 200⁰C. 
  • Heat oil in a non-stick, ovenproof pan. Add onion and fry until soft and just golden.
  • Add roasted vegetables and peas, curry powder, salt and pepper.
  • Mix eggs and feta together and pour into the pan. Leave to cook over a medium heat until 3/4 cooked through.
  • Place in the oven and leave to cook through.
  • Cool slightly and serve with a large mixed salad.
