This delicious and healthy salad can be served with crusty bread for a light lunch. Buy back bacon and remove as much visubl fat as you can. The avo provides the 'good' fats that we should be eating more of.

Method
  • Whisk vinaigrette ingredients together and set aside
  • Toss onion wedges together with vinaigrette and thyme and place on a baking tray. Season and roast in a preheated 180°C oven for about 20-30 minutes or until cooked through and caramelised.
  • Fry bacon in a non-stick pan until crisp. Set aside.
  • Toss roasted onion together with bacon, avocado and salad leaves. Drizzle with vinaigrette and serve.

 

Cook's tips

  • Vegetarian option: substitute bacon with blue cheese, feta or mushrooms
  • Cut the fat by using chicken rashers
  • Bulk up your salad with chunky roasted vegetables
  • Use a ready-made vinaigrette instead of making your own
