Rum and orange glazed gammon

Be careful not to overglaze your gammon. Baste as you go for the best results.

Method
  • Preheat oven to 200°C.
  • Heat up orange juice, dark rum, cinnamon stick, marmalade and honey, until well combined.
  • Brush gammon with glaze, reserving some for basting.
  • Roast for 20-25 minutes until crispy and fat is glossy, basting every 5-8 minutes. (You can grill gammon for 5 minutes if not browning enough.)
  • Rest meat for 10 minutes before slicing.


*Cook's note: serve with fresh cherries on a few slices of orange.*
