Method
  • Preheat oven to 240ºC.
  • Unroll lamb and spread with half the garlic and rosemary.
  • Reroll and tie securely with kitchen string.
  • Rub lamb with oil and rub over remaining garlic and rosemary.
  • Season and roast for 40 minutes, remove and allow to rest.


Beans:

  • Heat butter in a pan until frothy.
  • When butter begins to turn a nutty brown colour, add garlic and rosemary. Cook for 30 seconds.
  • Toss in beans and gently reheat.
  • Serve beans in large shallow bowls, topped with thin slices of lamb and green beans.
