Method
  • Shave cucumbers into ribbons with a vegetable peeler
  • Place a rounded tablespoon of terrine on one end of each ribbon and carefully roll to create a coil.
  • Slice the gravadlax (salt-cured smoked salmon) into 2cm strips and roll each one into a rose shape.
  • Top each cucumber roll with a salmon rose and a tuft of sprouts
  • Arrange on a platter and serve
