Method

 

  • Preheat oven to 180˚C.
  • Bake potatoes for 30 minutes, or until tender.
  • Mix together the salsa ingredients. Set aside.
  • Cut a cross into each potato and squeeze to open up.
  • Spoon topping onto each potato and serve with a dollop of plain fat free yoghurt.
