Adding a little turmeric to the flour will ensure a beautiful golden colour without over-cooking the calamari.

Method
  • Sift dry ingredients together in a bowl to mix.
  • Toss calamari in flour mixture until well coated.
  • Heat 4cm oil in a saucepan and fry calamari in batches, about 1 to 1.5 minutes, until crispy.
  • Drain on kitchen towel.
  • Grind salt and peppercorns with a pestle and mortar and sprinkle over hot calamari.


Garlic mayo

  • Stir garlic mayo ingredients together and serve with calamari and lemon wedges.


Good ideas

  • Serve the calamari with shoestring chips or potato wedges.
  • Use PnP’s fresh tartare sauce to replace garlic mayo.
