Salted nut caramel pavlova with fresh berries

Method
  • Scatter nuts on a silicone baking mat. 
  • Sprinkle over a few sea salt crystals.
  • Heat sugar, water and vanilla in a saucepan. 
  • Wash any sugar crystals off the sides with a brush dipped in water.
  • Boil until sugar has dissolved and becomes caramel in colour, and a small piece dropped into water becomes hard (hard-ball stage).
  • Scatter with nuts and set.
  • Place caramel in a food processor and blitz until it forms small crumbs.
  • Beat egg whites until they form soft peaks. 
  • Add sugar, one tablespoon at a time, beating well after each addition. 
  • Stir through vanilla, cornflour and caramel crumbs.
  • Pile onto a silicone baking sheet and make a slight indentation in the top.
  • Place in a 140°C oven and cook for 30 minutes.
  • Switch off oven and cool pavlova inside.
  • Heat frozen berries in a saucepan and add enough sugar to taste. 
  • Reduce liquid by half and cool.
  • Dollop yoghurt onto cooled pavlova and top with fresh berries and berry sauce.
