Method
  • Rinse beans, place in a large pot of cold water and bring to the boil. Cook for 5 minutes then remove from heat, cover and allow to soak for 1 hour. Drain.
  • Pour rice, lentils, beans and water into the pot and bring to the boil. Reduce heat, cover and simmer for about 30-40 minutes or unil cooked through. Drain and set aside.
  • Heat oil in a pan and fry onion, chilli and garlic until soft. Add tomatoes and lemon juice and fry for 5-10 minutes.
  • Add rice mix and coriander and mix well.
