Schiacciata – Italian grape bread

This foccacia-style flatbread is delicious served with drinks.

Method

Makes 1 large 30-40cm flatbread

  • Mix dry ingredients in a bowl and make a well in the centre.
  • Pour water and oil into the centre. Mix to form a dough.
  • Tip dough onto a floured surface. Knead for about 10 minutes or until dough is smooth and elastic.
  • Place dough in an oiled bowl and loosely cover with a tea towel. Allow to rise until doubled in size.
  • Preheat oven to 200°C.
  • Knock back dough and press into a greased roasting pan.
  • Halve half of the grapes (to let the juices soak into the dough). Scatter grapes on top and push into dough using your fingers.
  • Scatter over rosemary, drizzle with a little oil and season.
  • Bake for 30 minutes or until cooked through and golden.


More good ideas

  • Replace avocado oil with olive oil if you prefer.
  • Make the dough in advance, refrigerate until needed, then allow to reach room temperature before proceeding with baking.
